Cookie Studded Buttermilk Chocolate Bundt Cake

Preparation

  1. Preheat oven to 350. Spray with baking spray or grease and flour one Bundt pan. Set aside.
  2. Place the cookies in a resealable bag. Use your hands to crunch them into coarse crumbs. Set aside.
  3. In a large bowl or bowl of a stand mixer, beat together the buttermilk, sugar, eggs, oil and vanilla paste until smooth. In a separate bowl, whisk together the flour, salt, baking powder and cocoa. With the mixer running, stream in the dry ingredients and beat until well incorporated. Fold in 1/2 cup cookie crumbs. Scrape into prepared Bundt pan.
  4. Bake for 50 minutes or until a thin knife inserted in the cake comes out with just a few damp crumbs.
  5. Cool 10 minutes in the pan, then remove and cool completely on a wire rack.
  6. Whisk together the glaze ingredients in a small bowl. Drizzle cake with glaze then sprinkle with remaining cookie crumbs.
